Yogurt Ranch Salad with Little Gem Lettuce, Shredded Chicken, Apples, Blue Cheese, Celery, Shallots, Scallions, and Almonds

1. Prepare the salad ingredients: Shred the cooked chicken breasts with a fork. Slice the apple, shallot, and scallion stalks thinly. Cut the celery stalks on the bias.
2. In a large bowl, combine the little gem lettuce, shredded chicken, sliced apple, celery, thinly sliced shallot, thinly sliced scallions, shaved almonds, and crumbled blue cheese.
3. Prepare the Yogurt Ranch dressing: In a separate small bowl, finely chop the garlic cloves. Combine the Greek yogurt, chopped garlic, champagne vinegar, olive oil, juice of 1/2 lemon, dried dill, salt, and pepper. Whisk until well combined.
