Vegan Kale Salad with Caesar Dressing and Roasted Sweet Potato Fries

1. Prepare the Vegan Caesar Dressing: In a blender, combine the 1/4 cup soaked raw cashews, 1 teaspoon Dijon mustard, juice of 1 lemon, 1 tablespoon olive oil, and 1 garlic clove. Blend until completely smooth and creamy.
2. Roast the Sweet Potato Fries: Preheat your oven to 425°F (220°C). Slice the sweet potatoes into fries. Arrange them on a baking sheet, spray generously with avocado oil, and sprinkle evenly with taco seasoning. Roast in the preheated oven for 20-25 minutes, or until tender on the inside and crispy on the outside.
3. Assemble the Salad: In a large bowl, combine the kale with the prepared Vegan Caesar Dressing and toss until the kale is well coated.
4. Serve: Serve the dressed kale salad alongside the hot roasted sweet potato fries. Garnish the fries and/or salad with hemp seeds.
