Instructions

To make zucchini noodles: Peel off the skin of your zucchini. Then continue to put pressure on the zucchini and peel starting from top to bottom so they come out like little ribbons. Rotate the zucchini around to maximize surface area. Then sauté the zucchini ribbons in olive oil for a few minutes until soft (or you can even eat them raw!). To make pesto sauce: Blend 1/2 cup roasted red peppers with 2 tablespoons almonds (preferably shaved), one clove of garlic, and a splash of olive oil until smooth. Combine the zucchini noodles with the roasted red pepper pesto sauce.
