Made this vegan and gluten-free pumpkin marinara pasta dish topped with fresh parsley, and it hit the spot 😋 I used @eatbanza chickpea pasta shells (duh).

Instructions

Heat up a drizzle of olive oil in a medium saucepan. Add half a chopped up shallot (can also use garlic and or onions). Sauté until soft, about a few minutes. Add in about 1/3 cup tomato sauce along with 1/4 cup pumpkin purée. Mix in 1/2 teaspoon onion powder, a dash of crushed red pepper, a dash of oregano, and a generous pinch of salt and pepper (definitely taste and add as needed, this will depend on the tomato sauce you use too). Heat on low until sauce bubbles, stirring frequently. I like to top off my sauce with another drizzle of oil for extra flavor. Mix pasta in, and top with fresh chopped parsley!
