You can always count on shroomies for a good time 🍄 Mushroom, Roasted Garlic, and Shallot Pizza with Thyme & Chives! Made this one on stories the other night and thought it deserved a place on the feed. I used @eatbanza chickpea pizza crust for this one and topped it off with all the goodies. To roast garlic, remove the excess papery skin from the outside. Leaving the whole head in tact, slice about 1/4 in of the top to expose the top of the garlic cloves. Drizzle on some olive oil, wrap in foil, and bake at 400 for 40-45 minutes until garlic is soft when pierced with a knife. Let cool slightly and then remove the cloves by gently pushing it out of its paper. I used the whole head for this pizza. For the mushrooms and shallots, I thinly sliced 1 large shallot and sautéed it in ghee for 5 minutes until soft. I used 1 1/2 cups sliced mushrooms and sautéed them in 1 1/2 tbsp olive oil and seasoned with salt and pepper. Topped everything onto the crust before baking (this one came already topped with sauce and cheese, but if you are using a different crust spread on 1/2 cup tomato sauce and sprinkle with however much mozzarella cheese you want). Finished it off with a little fresh thyme before sticking it in the oven. Bake for 12 minutes at 400 F! Then top with thinly sliced chives 🍕
