Hash Brown Waffles with Avocado, Fried Egg, and Sriracha Garlic Sauce! It has been awhile since I’ve made a potato waffle!! How to make: Spiralize one russet potato using a small or medium noodle blade. Add 1-2 tbsp oil in a large pan on medium heat. Add noodles, and season with onion powder, garlic powder, and salt (also love bay seasoning if you have that). Cover and cook for 8-10 minutes until noodles are soft, stirring occasionally to prevent burning. Preheat waffle iron on medium high and spray with cooking spray/oil. Transfer cooked potato noodles to a bowl and mix in one egg. Spoon into the waffle maker and cook for 4-6 minutes until waffles are crispy and golden. Carefully remove with a fork. Top with mashed avocado, a fried egg, and sriracha garlic sauce! To make the sauce, I mixed together a large spoonful of @traderjoes garlic spread with @yellowbirdsauce sriracha. To thin it out, you can add a tiny bit of water. For more details on the potato waffle, you can check my story highlights! I have video instructions there
