Guacamole Toast! with Salsa Macha and Cotija cheese, a toast very much inspired by Mexican flavors! This time, the salsa macha I used was from @donemilious. If you do want to make your own, I know @freddsters has a recipe! Salsa macha is a spicy, nutty salsa that originated in Veracruz, Mexico. I love its spicy flavor and crunchy texture.

What you need

1 oz cotija cheese

1 slice sourdough bread

2 tbsp cilantro

½ jalapeno

2 tsp lime juice

½ tbsp unsalted butter

¼ tsp table salt

1 egg

¼ cup red onion

2 avocado

Instructions

For guac, scoop out avocado and add to a medium bowl. Toss in the lime. Add in the rest of the ingredients, and mash until everything is combined, but guac still has a few chunks. Toast your bread slice, and top with some guacamole (you'll have extra to save for later). Fry an egg in 1/2 tbsp butter, and add to the toast. Top with a drizzle of salsa macha and a sprinkle of cotija cheese, and more cilantro, if desired!
