Woke up craving an epic breakfast sandwich, so that’s what I made. Grilled Sourdough with Scrambled Eggs, Pesto, Goat Cheese, and Avocado. So goooood.

Instructions

Spread ghee or butter on one side of each piece of bread. Flip over, and then spread some mashed avocado on one piece of bread, and goat cheese and pesto on the other piece. Scramble two eggs in a pan, and then add to one piece of bread. Place the other on top like a sandwich. Add a little bit of oil to a pan and turn on medium heat. Cook both sides of the sandwich for about 4 minutes or until golden. Top with fresh basil if desired!
