Green Goddess Carrots with Pistachio and Basil!

Preheat oven to 425 F. Add carrots to a baking dish, drizzle on some olive oil, season with salt and pepper, and toss. Bake for about 30-40 minutes until carrots are nice and soft. While carrots are baking, prepare green goddess sauce by adding ingredients to a food processor/blender and pulsing until smooth. Taste and adjust as needed — you may need more or less lemon/salt. I would start with 1 1/2 lemons and about 1/2 tsp salt and see if you need more! Drizzle some sauce over the carrots (you will have a lot of sauce leftover, save it for other recipes!) and top with pistachios and a sprinkle of fresh basil.
