With the holidays coming up, I figured it was time to bring back this viral bad boy. The name of this dish generated a lot of controversy last time I shared it!! Is it cheesy scalloped potatoes? Is it potatoes au gratin? Dauphinoise potatoes? Idk!!! You tell me. One thing I do know is that potatoes are my everything in life and deserve a seat at every table. I mentioned this in my last share, my cheesy potatoes were my signature dish when I was a teenager. I would make them in the microwave with onions and cheese and serve it to all my friends!! They loved it, but probably bc we were 15 lol. This is an upgrade from that recipe for sureeee, but it’s honestly proof that potatoes can do no wrong.

Instructions

Preheat oven to 400 F. Heat up 1 tbsp olive oil on medium heat. Add the onions, and saute for 4-5 minutes until soft and translucent. In a medium bowl, toss together potato slices with ½ cup each of the cheddar and Parmesan along with 1 tbsp oil and some salt and pepper. Add onions to the bottom of a baking dish, and arrange the potatoes in layers. Pour over veggie broth, and then top with remaining cheese. Cover with foil and bake for 50 minutes to an hour. Remove foil, and then broil on high for 5 minutes. Top with chopped chives.
