Bell Pepper Tuna Melts!!! My bf is a canned tuna hater and even he loves these. I used @primalkitchenfoods garlic mayo and @miyokoscreamery vegan mozz (cause they’re my faves), but you can use any type of mayo (vegan or otherwise) or your favorite cheese and customize it yourself.

Preheat oven to 400 F. Place bell peppers face down on a baking sheet with some olive oil, and bake for 15 min. Remove from oven. While peppers are cooking, mix together remaining ingredients (tuna, mayo, green onion, salt, pepper), minus the cheese and avocado, in a bowl. Divide evenly into the peppers. Top with cheese, and bake for another 5 minutes. Finish off with a broil for 1-2 minutes, if desired. Top with avocado and enjoy!
