Baked Feta is back — this time with giant white beans! The trend may have come and gone, but I think this version is worth revisiting! I used @rancho_gordo Royal Corona beans and baked them with a block of feta, tomatoes, red onion, and garlic, and ooo baby was this a hit. Proof that beans are queen.

1 tsp salt

1 tsp crushed red pepper

1 bunch dill

1 bunch parsley

1 bunch oregano

¼ cup olive oil

5 oz feta

⅔ cup red onion

2 cup white beans

4 clove garlic clove

1 pt cherry tomato

Instructions

Preheat oven to 400 F. Add your feta block to a baking dish, and add the tomatoes, beans, onion, and garlic around it. Drizzle the olive oil over everything, season with a pinch of salt, pepper, crushed red pepper, and oregano, and toss together. Bake for 30 minutes, mix together, and serve with fresh herbs and a slice of toasted bread.
